A Summer Treat – Delicious Flourless Cookies

This week we have a special contribution by Kristin Anthonis, sharing a healthy treat that won’t break your summer diet. It’s even gluten free! 

Guilt-Free and Yummy!

So many of us love chocolate chip cookies. But we can easily feel guilty about enjoying these treasure treats because of how notorious they are for being unhealthy. Well let me be the first to tell you that there is a better way to have your COOKIES and eat them, too.

The main reason why traditional chocolate chip cookies are considered unhealthy is because of their high levels of sugar, butter, and refined white flour. This recipe fixes all of that, while producing warm and gooey morsels that are very satisfying, for more than just your taste buds.

They are high in plant protein (chickpeas and peanut butter), lower in sugar, and include antioxidants from the dark chocolate chips. And so easy! ENJOY, FRIENDS!

Healthy Chocolate Chip Cookies

Combine in food processor:

  • 1 can chickpeas
  • ½ cup maple syrup
  • ½ cup peanut butter
  • 1 tbsp. vanilla extract
  • ½ tsp. baking powder
  • ½ tsp. baking soda

Mix in:

  • 1/4 cup dark chocolate chips

Bake at 350º for 20 minutes
